🧂 Ingredients
- 2 packs plain tea biscuits (about 400 g)
- 800 ml milk
- 1 pack vanilla or banana starch (40 g)
- 4 large bananas (about 400 g, peeled)
- 600 g strawberries (washed and hulled)
- 1–2 tbsp butter (optional, for extra silkiness)
- 1 tsp vanilla extract
- A pinch of salt
- 10 g powdered gelatin (about 1 tbsp) + 3 tbsp cold water
🥣 Instructions (Extra Stable Version)
1. Cook the Cream
- In a saucepan, whisk together the milk and starch.
- Cook over medium heat, stirring constantly, until thick and smooth.
- Remove from heat and stir in vanilla and butter (if using).
👉 This creates a silky cream base for both fruit layers.
2. Activate the Gelatin
- Sprinkle gelatin over 3 tbsp cold water and let bloom for 5 minutes.
- Add the gelatin to the hot cream and stir until fully dissolved.
👉 This gives the dessert a cheesecake-like structure when sliced.
3. Prepare the Fruit Mixtures
- In one blender jar: add bananas + half of the biscuits → blend until thick and smooth.
- In another blender jar: add strawberries + the remaining biscuits → blend again.
👉 The biscuits help absorb excess moisture and create a stable base.
4. Combine with the Cream
- Pour half of the hot cream into the banana mixture and blend until smooth.
- Pour the other half into the strawberry mixture and blend again.
👉 Blending with the warm cream lightly “cooks” the fruit and stabilizes the color.
5. Assemble the Layers
- Pour the banana layer into a springform pan or baking dish and smooth it out.
- Add the strawberry layer on top and smooth again.
- Cover with plastic wrap and refrigerate for at least 4–5 hours or overnight.
🧊 Serving Tips
- Top with extra sliced strawberries or banana before serving.
- Dust with a little coconut, crushed biscuits, or drizzle with melted chocolate.
- Store covered in the fridge for up to 3 days.
📝 Notes & Variations
- You can replace strawberries with mango, blueberries, or peaches.
