Start your day with a delicious breakfast that feels a little extra special. This one simple filling turns ordinary pancakes into a rich, flavorful treat that’s quick to make and hard to resist. Perfect for cozy mornings or a brunch that wows without the effort.
For the crepes (2 servings):
Ingredients:
- 2 eggs
- 2 cups (400 ml) fresh milk
- About 2 cups flour
- A pinch of salt
- 2–3 tbsp oil
- 100 ml sparkling water
- Sunflower oil for brushing the pan
🥄 Preparation:
Throw all the ingredients into the blender and blend until smooth.
Heat a pancake pan. Always brush the bottom of the pan with sunflower oil — otherwise, there’s a big chance your pancakes will stick, even if you’re using a non-stick pan.
Pour about one ladle of the batter into the pan and spread it evenly over the surface. Cook until the edges of the pancake start to lift slightly. Flip carefully with a wooden spatula. Once the edges turn lightly golden and rise, the pancake is ready.
For the filling:
🥚 Creamy Egg & Cheese Spread
To make this rich and flavorful spread, you’ll need:
- 8 hard-boiled eggs
- 600 g cottage cheese (lightly salted or homemade)
- 5–6 tbsp thick yogurt
- 4 tbsp olive oil
- 1 tsp butter (soft or at room temperature)
- 3 garlic cloves
- 1 tsp salt
- 1 tsp black pepper
- Hot red paprika — to taste (for sprinkling)
🥄 Preparation:
Boil the eggs until hard, then peel them. Add the eggs, cottage cheese, yogurt, butter, olive oil, garlic, salt, and black pepper to a blender. Blend everything together until smooth and creamy — it should turn into a consistent sauce-like spread. Transfer to a serving bowl and sprinkle with hot red paprika (if you like).
You can add pickles and/or olives, along with bacon, to the egg filling — or even your favorite salami.
